An interview with Susan Viapiano, owner and founder of the new Primo's Diner in Sea Breeze, follows:

How did you get into this line of work?
“I’ve worked for other restaurants for more than 40 years; I started when I was 14. I wanted to try working for myself and making my own rules,” said Susan Viapiano, owner of Irondequoit’s newest diner, Primo’s, in Sea Breeze.

How did you choose the diner’s location?
“My husband came across it ... we had been looking, for a few years, for a place to buy, not rent.” (The location most recently was Churi’s, an ice cream stand and Thai restaurant.)

What’s the origin of the diner’s name?
“I wanted it to be ‘Salt and Pepper’ Diner, since I collect salt and pepper shakers, but that was taken. My daughter suggested ‘primo’ for ‘first’.”

What is your background?
“I’ve worked in a variety of restaurants, including the former Beefsteak Mining Company in Irondequoit. I was also a unit manager for Arby’s for a few years.”

What has been the response to the diner?
“The neighborhood has been wonderful. We have some people who come in four times a week or more. I like that we get to know them by name.”

In a customer’s words
“Susie’s the best thing to happen to Irondequoit since Tom Broderick (former Town Supervisor),” said Jimmy Dwyer.

What are your specialties?
“For breakfast, our Southwestern chicken omelet, which is my creation; and for lunch, Wicked chicken, which is my friend’s recipe.”

Breakfasts also include a variety of egg dishes and pancakes.

Lunches include fresh, homemade soups and chili, paninis, subs, burgers and more.

Friday dinners include a fish fry, steak, chicken French, and chicken parmesan. Take-out is also available.

What are your plans for the future?
“We plan to serve ice cream, too, and are shooting for an April or May opening of our outdoor stand. We’ll have a grand opening then, too.”

In her own words
“It has always been my dream to have a place of my own. It’s still new to me, so it’s still so much fun!”
